Bloodshot eyes in the morning, even when sleep well/not hungover. what else could it be?

Dryness: Do you sleep under a ceiling fan? Do you sleep with contacts on? Use a thick artificial tear product at bed time, and start taking omega three products if approved by your medical doctors. If there is itching present, you may have an allergy issue involved also.
