Could electrolyte imbalances like acute hyponatremia (sodium value of 128) cause something like gullian-barre with sudden, progressing numbness in all extremities followed by chills, weakness, unsteady gait and confusion? resolved w/ iv fluids?

Guillain-Barre Syndrome can last several weeks usually and does not "resolve" with i.v. fluids. A modest drop in sodium as listed would not be expected to cause such severe symptoms, but glad you had a reversal with fluids, suggesting dehydration.
