Yes, they do. But most of the demineralization comes from the acids that are produced by bacteria residing in carious lesions.

ACIDIC FOODS AS WELL AS LIQUIDS CAN CAUSE EROSION OF TOOTH STRUCTURE. TOO MUCH FRUITS OR SODAS AND POOR ORAL HYGIENE CAN CAUSE LOSS OF ENAMEL AND DENTIN.

Most of the damage is done by acid producing bacteria. Acidic foods exacerbate the situation. Alteringn your diet will not fix an infected tooth. Please see your Dentist.
