Diet, exercise: Everybody's levels of cholesterol and other blood lipids (fats) is largely determined by genetics, and secondarily by diet and body weight. For optimal levels, eat a balanced diet -- a modest amount of red meat is fine -- exercise, and lose weight if you overweight. No single meal makes any difference: it's OK to have red meat (even a very large serving) from time to time.

It's ok.: Eating that once a month shouldn't make a significant difference. A 100 gram (g) lamb shank contains: Fat- 13.5 g, Saturated Fat - 5.6 g, Monounsaturated Fat - 5.7 g & Polyunsaturated Fat -1.0 g.
