Diet, exercise: Everybody's levels of cholesterol and other blood lipids (fats) is largely determined by genetics, and secondarily by diet and body weight. For optimal levels, eat a balanced diet -- a modest amount of red meat is fine -- exercise, and lose weight if you overweight. No single meal makes any difference: it's OK to have red meat (even a very large serving) from time to time.
