Hard to say: Living gluten free is difficult. You may be avoiding obvious things like wheat,barley and rye but be exposed in other products.Even a trace amount found in things like beer & soy sauce can set your system back months.You may identify other agents you are intolerant to, like #40 red dye in any food/beverage. You may also have cross reactions to other foods (IgA) that could be identified with tests.
