To "profile" or not: To do "occupational profiling" or not... that's an interesting question. The ethical answer would be "no," because we shouldn't assign particular STD risk levels to various professions by using common stereotypes. The practical answer is... well, nobody knows. Does the average masseur or masseuse have more STD's than the average accountant, barista, or policeman? Nobody really knows. Date wisely.
