Darkly colored ones: such as broccoli, spinach, kale, beets, pumpkin, squash, carrots, beans, peas. Anything that is white, incidentally is not a vegetable except cauliflour and parsnips. So don't count potatoes as vegetables! Tomatoes are technically fruit, but they are eaten as if vegetables and they are darkly colored, so eat them too. They are especially healthy when cooked, or in paste and sauces.
