Bread is just bread: Nothing happens to bread except mold. Unlike other, more perishable foods, bread can come in and out of the freezer, and is not any more or less safe due to that. The reason is that a person looks at his bread to check for mold, and he feels the texture to decide if he wants to eat it. The sell-by date is not a strong determiner of breads edibility. If it feels right and looks right, it's a meal.
