Do our tastes in/ability to digest food change as we age? if so, why? i find that certain foods i used to love no longer appeal to or disagree w/me.

Tastes do change: but not as much as their associations. Having pleasant or unpleasant experiences associated with foods/tastes will have a large impact. And some things like hot/spice changes the nerves that are triggered by them and they have less effect over time. And children tend to have different tastes than adults.
