Be careful: "Tannin sensitivity" is a "pop" diagnosis that might just account for symptoms in some people. There are no evidence-based labs, and your best move is simply to keep a very careful food diary and experiment, staying as objective as you can, and recognizing that there are other causes of feeling generally unwell, from life situations to Addisons, porphyria, or a faulty home heater.
