Saturated fats: are bad for the heart, monounsaturated fats are good. Cholesterol is bad. So choose the cooking oil with the most monounsaturated fats and no cholesterol; these are mainly the vegetable-derived ones. Olive oil, corn oil, and peanut oil are three of the best; butter, lard, and palm oil are three of the worst.
