HIV: probably not, often you get 3,6 and 12 months labs done, ideally though if the source person/patient is proven negative it's quite unlikely you will get it. Also, if you had a high risk exposure you should be taking antiviral therapy prophylactically, early, this is the best defense. Talk to your Health Department for conclusive answers!

Yes and no: All tests have their sensitivity and specificity. Also, their predictive value based upon the a priori probability that you have a particular condition based on your history. You need a good doc who you can sit down and talk with about your particular concerns and get them answered to your satisfaction.
