Aren't foods healthier microwaved instead of fried?

Not necessarily: this is a pretty vague question. Typically grilled over fried is a bit better for cholesterol and calorie intake. But microwaved has a whole other question of cooking all the way through etc. not a yes/no question.

For the most part: If you fry foods at too low a temperature or put too much food in the pan it will lengthen the time it takes to cook and will cause the food to absorb more fat from the oils. Some oils are less healthy than others. Studies support the notion that fried foods increase the risk of cancer and cardiovascular disease. Frying in a canola oil for very brief time at high temp may be less harmful.
