Minastrin: as the iron in blood oxidizes the color goes from bright red to dark red to brown. Think about when you have a cut, the brown is the scab that covers the wound. Because your flow is lighter, the transit time through your vagina is longer and gives the blood a chance to oxidize and therefore become brown.
