Green Beans: Green Beans are high in Vitamin C, fiber, and carotenoids. In one cup of green beans, you get about 27% of your daily requirement of Vitamin C, 13% of your daily requirement of fiber, and they also contain iron, B-6, Vitamin A, Magnesium, and Potassium. I recommend steaming vegetables when possible to avoid losing nutrients in the water. Frozen green beans are still healthy and retain nutrition.
