Histamin intolerance: Histamine intolerance refers to a reaction to foods that have high levels of naturally occurring histamine. Wine has high amount of histamine. All alcohol can make dao ( diamin eoxidase) , one of the enzymes that metabolizes histamine in the body, less effective- thus histamine will build up and give you certain reaction. Stay away from alcohol and be careful of highly processed or fermented food.
