Purpose or problem?: I am not sure of what your question is. The salivary glands produce an important digestive enzyme, called amylase, that helps to break down starches and liquefy the food in the chewing phase of digestion. The saliva also helps to keep the mouth moist and helps control the bacteria that produce cavities and plaque formation. Do you have a problem?
