When you can jump : That will need a period of rest and rehabilitation. If you can't jump your body is telling you it's not ready. Make sure you are following up with your neighborhood podiatrist or orthopedist for a full exam.

Why?: It is difficult to assess your injury from your brief description, but the most sensible answer would be "when it doesn't hurt to jump." pain is our body telling us what not to do. A grade 3 sprain means you have completely torn ligaments. They need rest and support to heal properly. Allow yourself time to heal, then go back to whatever activities make you happy.
