We don't know: The HIV virus is able to evade the immune system. If we had the answer why, we would be able to create a vaccine or cure.

Viruses: Viruses including herpes virus are difficult to fight because they insert themselves into our dna (or rna) and use our own cellular mechanisms to multiply, and when they do, one virus makes thousands and thousands of baby/fully formed viruses.
