Does a fractured / dislocated jaw always cause bruising?

Not always: Usually, though, mandible fractures cause some bruising. This will depend a bit on your tendency to bruise and skin complexion. Jaw dislocations don't often bruise.

Most likely: Fractured jaw most definitely. Dislocated jaw can have a range of presentations that may not involve brusing, but if it was dislocated by trauma, then a bruise will probably form due to local internal bleeding.

No: Not always... If you've had jaw trauma, the best person for evaluation is a board certified oral & maxillofacial surgeon.
