A lot: In the optimal situation surgeons can procure a donor's heart, lungs, liver, kidneys, small intestine, pancreas, arms, face, larynx and abdominal wall. There is experimental work being done on some other organs as well. As far as tissues surgeons can procure corneas, skin (for skin grafts) and bone (for orthopedic grafts).
