Doctor can evaluate: When people get viral cold symptoms, they get more mucus production in the nose, sinuses, throat areas. Haven't heard about getting just increased salivation. A primary care doctor can evaluate to see what might be happening, and refer to an ENT doctor if needed. Is the throat sore, making one not want to swallow, which would increase saliva in the mouth? Is one nauseous, leading to salivation?
