Yes they do: During ejaculation men release several chemicals includes, norepinephrine, vasopressin, nitric oxide, oxytocon, and prolactin women also release oxytocin, vasopressin, nitrou oxide and prolactin and norepinephrine.

Yes, but...: As the beings of biological automation, our body is constantly changing, adjusting so to maintain a homeostasis within a reasonable "normal range" but with spurts of ups & downs to effectively, hopefully successfully handle a wide range of relationships to achieve comfort & control for survival, growth, & continuation. So, all hormones are constantly fluctuating for the described need of living.
