Yes, it's safe.: Cellulose is the main structural component of plants. It gives plants their stiffness. CarboxymethylCellulose is Cellulose that was treated to dissolve more easily in water. It’s used as a thickener for foods (like ice cream) and other products. It’s a form of fiber, and therefore passes through your digestive tract without being absorbed. It is considered to be safe as a food additive.

Yes: Carboxymethylcellulose is used as a thickener for ice cream, jellies, icing and other foods. It is on the generally recognized as safe list and is considered non-toxic and hypoallergenic. It is poorly absorbed and acts like fiber. While I do my best to minimize consumption of food additives, this one seems to be quite safe.
