Bacteria: Tonsil stones - tonsilliths - are concretions of impacted food/saliva and bacteria that get traped in the crypts of the tonsils. The bacteria and the decaying food create the bad smell.

Bacteria: Tonsil stones are benign firm white "stones" that form in the tonsil crypts from bacteria... Much like plaque on your teeth. They are not dangerous, but can contribute to bad breath.
