What're the after effects on a person's body and mind after they are taken off a ventilator?

It depends: Ventilator provides for breathing and extra oxygen when it is needed because the pateint is not able to do it on his/her own. So if you remove it because it is a terminal event, most pateints die shortly thereafter. But if they have reovered then pateint should not have any after effects.
