None that I know of: Perhaps it is a test for illegal drugs, but I have not heard of a saliva test that requires fasting.

None that I know: Most salivary tests in dentistry are to measure saliva production or to look at bacterial measurements for periodontal disease.

Many reasons: Saliva keeps your mouth moist, helps tongue function & starts the digestion process with an enzyme called amylase. Saliva antibodies & proteins are helpful in reducing dental bacteria & bacterial infections & also acts as a buffering agent which helps protect against the acid which would otherwise damage tooth enamel and lead to decay and tooth loss.

Saliva differences: It's very simple real saliva is produced by salivary glands throughout the oral cavity. Artificial saliva is a substitute that is produced that is used when the body can't produce saliva. Usually this happens do to side effects to certain medications, patients undergoing radiation treatments, certain autoimmune diseases to name a few causes. There are a variety of products to aid as substitutes.

Acidic!: Saliva ph of 5 is quite low! that means your saliva is quite acidic. Makes me wonder if you didn't have it checked right after drinking a can of pop or a cup of coffee or something along those lines.
