Safe: If the only problem is an egg allergy, it should be perfectly safe to use applesauce as an egg substitute.

Safe: Very safe. Egg-allergic people are allergic to the egg-whites of chicken eggs. So as long as the food does not contain any eggs, any other foods may be used safely. Do not use egg yolks as it is impossible to be completely sure that there is no trace of egg white with the egg yolk. Also, be sure the person has no other food allergies besides eggs.
