Would a yeast infection in the blood stream show up on blood smear?

No: A "culture" of the blood would be a better way to find fungal infection

Rarely: You would need to have a high load of yeast in the blood to see it on a peripheral smear... But I have seen yeast on such a smear several times, so it is possible.
