Compliance is key: The first step is to make sure you are truly following a gluten-free diet. Gluten can hide in substances like beer and some pills. Consult with a dietician to make sure. If this is still a problem, consult with a gastroenterologist to perform other tests to make sure there's no other inflammatory process going on or other causes. There's a medicine called "budesonide" they may try.

Celiac Disease: The best qualified is a gastroenterologist. If you have seen one, or two, and are not satisfied, the next step is to locate a nationally known institution to find someone who specializes in celiac disease for alternative treatment options.
