Nopales: Looking at prickly pear cactus, we might not realize the paddles can be food -- but they have a long history in mexican cuisine. The flat pads are called "nopales;" the fruits are "tuna." nopales have lots of fiber, vitamins and minerals. For people with diabetes, eating nopales may lower blood glucose. Also, they have 17 Amino Acids -- 8 of them "essential" ones that our bodies can't make.
