I have intense pain in the roof of my mouth when i try to eat/swallow and then it lingers after eating. i am having trouble getting anything down.

Stomatitis: Sounds as if you may have stomatitis. You should be evaluated to provide the most appropriate treatment.

You need an eval: An sooner rather than later. If you are having difficulty eating than you should seek help in person, sooner rather than later. As eventually dehydration and the associated complications could set in. It's hard to say what causing your pain without assess your mouth.
