what symptoms of celiac disease can infants get if they are not on solid foods yet?

No gluten, no sprue: "celiac" symptoms: colicky, crampy, fussy, maybe diarrhea are common in infants. Classical celiac disease occurs after weaning, eating grains like wheat, barley, rye, triticale (contain gluten). Not noted if solely breast feeding. Symptoms can occur later in life.
