Depends: Each person is different and your orthodontist can give you the best estimate. However, by complying with his/her treatments (wearing the elastic bands when you're told too!) you can do your part to make sure your time with braces is as short as possible.

Retainers: Once the bite is correct and all of your teeth are straight the dentist will remove all of the brackets and adhesive that held your brackets. After you are cleaned up he will take impressions for retainers that you will wear all the time for 6 months then nightly for many years. Some offices place permanent wires behind your upper and lower 6 front teeth however makes it difficult to floss and kee.

2-3 days: It will take a few days for your lips and cheeks to get used to the feel of the braces and for your teeth to adjust to the 'pressure'. Most patients feel they can eat normally again between 2-3 days after the placement of new braces.

Many factors: Many factors go into the decision to proceed with orthodontic care... Your post contains no info on your oral health, your occlusion, or your treatment objectives. You can't convince your dentist to start ortho care if he does not deems it appropriate for your mouth. Have this dentist explain his/her reasoning.
