You're right: It's not due to a nutrient deficiency. It's more common with a restricted arch of teeth, wide tongue or people that suffer from bruxism. It's referred to as a scalloped tongue.

Scalloped tongue: is a condition that may be caused by abnormal enlargement of the tongue which can be attributed to many factors including: deficiency of the thyroid hormone, spleen deficiency, sleep apnea, bruxism, just to name a few.
