More research needed: There is some scientific evidence that some compounds in carrots (and in other plants) fight inflammation in the laboratory. There is a study that suggests purple carrots fight inflammation in rats. It is a long way from the test tube to the tummy, though. Too, humans are not rates (usually). There is a small study in 16 males, with the extracts from purple carrots, but there was no effect.
