Is it true you can be tested for iron deficiency and be negative then get tested years later and it become positive?

Yes!: Tests for iron deficiency only tell you what your iron status is at the time when they are done. Iron status is a changing thing, though, and depends on many things: amount of iron in your diet, how well it's absorbed, how much you lose through blood loss, etc. if these factors change over time, you can become iron deficient when you weren't before.
