I'm curious what could happen if someone takes too many tablets that contain 875 mgs of amoxicillin and 125 mgs clavulanic acid?

Probably nothing: These drugs are pretty much harmless. Someone could hardly take enough do do any damage. (Ten times this dose, or its equivalent in similar drugs, is sometimes given intravenously for serious infections.)
