Many kinds: Volatile gases- sevoflurane, Desflurane and idoflurane. Nitrous oxide . There are many intravenous agents used as well including propofol, Midazolam and opioids.

Depends: Do you mean what type of anesthesia or what medications tend to be used. Either way, its gonna be a long answer as it also depends on how long the surgery is and what type, how sick the patient is, how severe blood loss may be, etc
