How can dental hygienists remember periodontal pocket measurements without writing them down?

I am sure recorded: I am sure that the measurements are being recorded, either manually, on computer or there are some programs where the instrument doing the measuring senses the reading and records. Need to have a record to compare on subsequent visits and protocol.

At a first periodontal exam the dentist decides if a deep scaling and root planing is needed. Can a hygienist easily do this even when deep millimeter pockets of 5 to 7 millimeters? Is it unusual for a dentist to do this work in most offices?
