Fungus infection?: If only one hand is peeling, you could have a fungus infection -- like "athlete's foot", except on the hand. Or you could have come in contact with something that inflamed your hand, and the peeling signals that it is going away. If it persists, see a dermatologist and get a precise diagnosis and treatment.
