What hormone is responsible for forcing milk to be released out of the breast; may be stimulated by?

Prolactin, oxytocin: Prolactin is the hormone made by the pituitary gland during pregnancy that causes the breast to produce milk. Oxytocin is the hormone that causes release of milk by the breast. Stimulation of the nipple (such as infant suckling) causes release of oxytocin and hence breast milk release.
