Most commonly: It is related to the complex interplay between taste and smell. You know that some research suggests that up to 80% of taste is dependent on smell. And when people get sick, often the tissue lining the nose where your smell receptors are, gets inflamed limiting the sensitivity of those smell receptors and ultimately "dulling" taste.
