Gallbladder/pancreas: Usually you start with a history and physical and many times a doctor can tell you whether or not one of these organs is affected.  An ultrasound can show you gallstones or inflammation around the gallbladder.  It wouldn't visualize the pancreas as well- a dedicated ct scan using pancreatic protocol would be better.  You'd probably have lfts done as well as a lipase and/or amylase.

Blood tests.: There are several tests done on the blood which can point to problems related to pancreas inflammation (amylase, lipase levels; for example).

Lipase elevations: Can come from different causes, two of which are pancreas and kidney problems.  Usually, very high lipase levels along with elevated amylase levels are seen in acute pancreatitis, whereas lipase elevations in kidney diseases are not that high.  Pancreatitis can show on ct scan, and kidney problems, can elevate BUN and creatinine levels.  Ask your dr about specific advice.

Unlikely: All laboratory results need to be interpreted in the clinical context and the doctor who ordered the tests is usually in the best position to do that. Having said that, based on the data you provided, there is no reason to suspect liver or pancreas problems.
For good health - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex.

Back pain: Could be some primary back problem. A medical problem that can cause symptoms like that would be adrenal problems. Any blood pressure problems (typically low), fatigue?

If : If the tests were performed in a teaching hospital is is normal for doctors in training to have their work confirmed by the attending physician.  If the tests are very specific in nature it is not unusual for an initial screening be done by a general physician to ensure the study is adequate then passed onto a specialist for a more detailed reading. The fact that two physicians are reading should be of concern, if fact i would be more comfortable knowing that more than one person is looking at the studies.

One may have to visit several doctors to find one who has enough time during the visits (the current health care & insurance system in the U.S. Causes very short visits). Usually, only one issue can be addressed per visit, so plan to do several visits (initial, labs & follow-up, tests & follow-up, specialists, etc...).
