Normal: Each bag was a Liter of fluid (essentially a quart). Each quart is two pints. A pint of fluid weighs about a pound. "Pints a pound the world round" so you got 8 pints or 8 pounds of fluid. Your weight went up appropriately. If you were severely dehydrated it will stay in your body until your usual input (eating and drinking) and output (peeing and pooping) is restored to normal.

Many issues!: Many problems may be unrelated, but pcos needs to be excluded, because of it being a part of metabolic syndrome. You did not mention if you are overweight and carry it on the middle. Pcos is associated with high free (not total) testosterone, which could explain several issues.  Hyperpolactinemia is common, could cause sore breast, but is associated with scant or absent periods.  It needs checking.
