Possibilities: infection, inflammatory and autoimmune disease, tumor, irritant, medications, allergy, etc.

See doctor: It has been too long for a viral gastroenteritis  and I wonder if you had recently been treated with an antibiotic which occasionally could lead to your symptoms and require prompt treatment with another antibiotic. Nonetheless you really need to see a doctor to get tested and treated.

water stools for 2 1/2 weeks now.  no fever not really hungry.  how long should i wait before i go to the doctor?

Need tests: The typical viral gastroenteritis usually doesn't last much longer than a week. You should have stool tests done to check for several bacteria and parasites that can cause diarrhea. If you have been on antibiotics just prior to the onset of diarrhea you should also be tested for C. difficile infection. 5 days post gallbladder surgery hardly any pain no meds and everything great other than cloudy yellow urine. not enough water? stool is normal also

Yes: ambulate , mostly drink plenty of fluids and go for follow up visit to your surgeon , you will be fine.

Constipated: See your PCP but, If this is new drink more water and increase fruits and vegitables in your diet.
Try some DSS and Metamucil OTC til you get regulated. If you become bloated or crampy the seek medical care immediately

Dumping syndrome?: Dumping syndrome implies bolus emptying of the stomach into the duodenum with associated release of digestive hormones &amp; insulin. Metabolic, motility, anatomic (shunts of upper GI tract), &amp; iatrogenic (drug side effects) factors are causative. Symptoms: flushing, sweating, dizziness, weakness, hypovolemia, passing out. Consider also gastro-colic reflex as seen in some Irritable Bowel Syndrome.

If : If you are passing gas then I am not very concerned, however if you are not passing gas and have not had a bowel movement you need to contact your doctor. You may be dealing with a bowel obstruction. Your doctor will examine you and decide if imaging studies are needed, or your doctor may prescribe an enema first.
Please contact your doctor if you still have not had a bowel movement.

Yes: Too much water can overwhelm the colon's ability to absorb it all and can definitely cause watery stools.

Need to examine: Bleeding from any body orifice is a cause for concern. It may be as simple as hemorrhoids, but it still warrants evaluation and it would be prudent to see your doctor.
Wish you good health! - Have a diet rich in fresh vegetables, fruits, whole grains, milk and milk products, nuts, beans, legumes, lentils and small amounts of lean meats. Avoid saturated fats. Drink enough water daily, so that your urine is mostly colorless. Exercise at least 150 minutes/week and increase the intensity of exercise gradually. Do not use tobacco, alcohol, weed or street drugs in any form. 
Practice safe sex, if you have sex.
