See answer: I am not convinced that you have a UTI unless a urine culture has been done to verify it. A urinalysis alone would not be adequate and likely inaccurate given your description of vulva and vaginal redness and burning which is more consistent with a vulvovaginitis and which would contaminate any voided urine sample. In general, UTI and vaginitis are separate conditions and treated differently.

i just finished  amoxicillin, now i have a yellow mucousy discharge from my vagina. no swelling, no redness, light itchiness. what could this be?

Yeast? Other?: The timing suggests a yeast infection. However, yeast usually causes itching and irritation, with not much discharge; and yellow discharge wtih mucus goes along with other infections, including STDs. Amoxicillin doesn't treat gonorrhea or trichomonas and is only partly effective against chlamydia, so STD testing is in order if you might be at risk (or any doubt about it). See your doctor soon.

Yeast infection: This sounds like a possible yeast infection, suggest you have this examined and get treated - miconazole is a treatment that can be purchased OTC, but you should discuss with your OB first and get a full examination to be safe
