the i am a 31 year old women, and the outside of my throat hurts below the adams apple,  with itching by the collar bone  and slight weight gain.

May be ur thyroid: It could be a goiter (small or large mass on the neck), thyroid nodules, or cancer or something else. You should go to your primary care doctor and get bloodwork (tsh, t3, (liothyronine) t4) and get an ultrasound of the throat area and possible biopsy.. With weight gain, i would suspect you may have hypothyroidism, which goes along with the goiter. It may also be nothing. It is hard to say online.

More info needed: You didn't say anything else about the feeling or what your history is.  It could be any number of things, from allergies, a cold, post nasal drip, laryngopharyngeal reflux, a tumor etc.  If it doesn't get better or is associated with difficulties swallowing, speaking, or breathing, i'd get checked out.

Yes: Yes, as you grow and mature the thyroid cartilage will enlarge and your voice will deepen. That is a normal change. However, if you have an excessively sore throat that is more recent, this might need to be further evaluated.

Could be: Your neck can become tender during an upper respiratory infection.  However, if the swelling is not going away or if you have trouble breathing or choking, you should see your doctor right away for an examination.  It could be something more serious, especially if it isn't going away.

Not very clear: Not sure if I understand your question but in my opinion, just stop pinching the area. Why look for trouble?
See your PCP if you have any concern with your throat.

Bone?: It is possible, particularly if you have been eating meat, to have a small bone stuck in the back of your throat. If it feels as though something is lodged there,  I would seek out medical attention in the emergency room immediately. This area can be visualized if necessary, by direct vision, endoscopy, or x-ray. Good luck.

: I am not sure if you are referring to something visible internally or externally. You may be describing your uvula, trachea, Adam's apple or thyroid. See your GP if concerned.

is it normal to feel a hard large lump under the adams apple? is this just the throat or a tumour?

Likely not: A tumor. Could be a thyroglossal duct cyst which is congenital and benign (though sometimes they can get infected). Best to see an ENT doctor (ultrasound may be needed to further investigate).
