Maybe: It my be related to the food that you are eating. On the other hand the excessive sweating may be related to a thyroid problem and/or the temp of your bedroom.

Fermentation: The only time I have seen this happening is if you have fungal infection in your body. Certain fungus ferments the sweat or other body fluids. Seek MD help.

More detail needed..: There are so many variables... what is the air temp of yoursleeping area, what type of bed covers, what is your diet, what is your BMI, what other medicines, what other health issues? The odor could be the result of skin bacteria working on sweat chemicals. Sweatting is also a way the body can rid itself of toxins, hence the value of sauna therapy for detoxification. Vinegar swell: Most likely it i just your sweat. A light sweat can have sort of a vinegary, mild acid odor. After the time it gets stringer, starts smelly fishy, then gets really foul. Make sure you wipe you sweat off after all exercise. Some people just sweat at night (colds, medications, certain diseases, over-bundled). Wipe it off, use a deodorizer, and see if it comes back. It does not sound like a disease.

Deodorants can help you reduce odor caused by bacteria and antiperspirants can help reduce the volume of sweat produced. Even Botox can help with long-term reduction of sweat.

Not 'acidic': 'pop' claims about 'acid' and 'alkaline' body types are totally made up. Certain bacteria that some people have degrade certain products in your sweat to certain short-chain fatty acids that have a vinegar smell. Shower a few times a day and this will probably help.
