We have been getting away with this for five thousand years so I think after you get over the initial scuples you will get used to it.

Change diet: Too much saliva is usually not something to worry about unless it persists. It's normal to make more or less saliva depending on what you eat or drink. Your body usually takes care of excess saliva by swallowing more.
You can make too much saliva if: 
•One or more salivary gland is overactive
•problems swallowing
Acidic foods tend to trigger a lot more saliva than sweet foods. Diet change can help

Excessive Saliva: This is a MUCH better scenario than having dry mouth. Saliva is produced to help in digestion of your food. Upon chewing or even smelling food, your body naturally responds by salivating. I would not be concerned by this.

Very low: Unless the dentist had an active infection at the time your chances of getting any kind of illness from this incident is very, very low. That being said, I would switch dentists. Any time a dentist is talking "over" a patient they should be wearing a mask. This simple procedure protects both the patient and the dentist from unwanted exposure to germs when they are in each others personal space.

That could happen: Was it your spit or someone else's ?  If you already have a cold sore on your mouth then you already have one. Fresh moist spit?

how come i get cotton mouth and stringy spit when i work out?

Not Enough Water: When you workout, your body overheats and cools itself by sweating.  This causes your body to lose water very quickly which causes your saliva to thicken.  Make sure between reps to drink water in order to replenish what you lose.  This will help with 'cotton mouth' and the stringy spit.
